Todd is a dynamic and passionate professional leader in Northern California’s food industry. Todd established ChefsLounge with thousands of members with his colleague, Neil Marquis. ChefsLounge reunites food and beverage entrepreneurs on the first Monday of every month, with the location always a pleasant surprise. This non-profit organization is a vibrant community of chefs and foodies, hosting two annual fundraisers per year and making generous donations to Project Open Hand.

They don’t stop at foraging for mushrooms or digging up some California truffles, it could also mean touring a winery or a farm. I attended one of these dinners at Love Apple Farms in Scott’s Valley near Santa Cruz, where we enjoyed a tour of the renowned local produce grower. Amidst the breathtaking views, and amongst the greenery of the Santa Cruz Mountains, we were surrounded by the aroma of organically grown produce, adhering to the highest standards of sustainability and farm-to-table practices. The farm showcased freshly picked lettuces, tomatoes, fruits, vegetables, and spices in vibrant hues, setting the stage for a communal feast at a large wooden picnic table. The meal began with mushroom cigars—delicate pastry shells filled with delectable porcini purée—marking the start of an unforgettable culinary journey, followed by succulent, roasted chicken served alongside freshly foraged mushrooms and the freshest salad I’ve ever had. With every bite, a story, a paired wine surrounded by the happiness that great food and company will bring to your heart.
At local food fairs, you’ll likely run into Todd featuring his mushroom distributorship with great enthusiasm. Seasonally, you’ll find him with freshly harvested truffles cooking something delicious to delight attendees. Our group left one of these events with a happy heart, and a few at-home live mushroom farms of our own.
